In other soft synths from Arturia I use to assign my volume pedal to the filter cutoff or to a macro knob for performing modulation while playing with both hands, which is impossible with the knobs.

I tried to do this with Pigments, but I was not able to assign the volume pedal to any knob.

Maybe that can be fixed in a future update?

Do you mean Expression pedal midi CC#11?   
In Pigments that's the EXP modulator. It's a reserved parameter. It's the 5. modulator in the coloured modulator line. It's actually just like when using the Matrixes you mention. Just add the EXP modulator to any parameter, then the expression pedal should control that parameter.
