Have you tried changing the controller layout in the Settings > Midi > Midi Controller ?
We added a Generic 9 knobs + 9 faders layout

Ah yes. This is a new mode. My AL5 was set to 'Generic' - now it needs to be set to 'Generic 9 Knobs + 9 Faders'. Is there any documentation available to support this?

However, I think there may be a bug: When assigning physical knobs to the 9 virtual knobs, the 6th virtual knob gets correctly linked to a knob on my Nektar P1 controller using CC37 and the 9th virtual knob gets correctly linked to my midi volume pedal using CC18.  But then the 6th virtual knob responds to both CC37 AND CC18, and the 9th virtual knob does not respond to anything even though it is set to respond to CC18.

Assigning faders works correctly.

Both CC37 and CC18 function correctly when using the individual Arturia synths.

Windows-11, 64gb ram, Nuendo 11.0.41, V7 Collection, Pigments, OB-Xa, CS-80 V4.

You can try the FAQ but i'm pretty sure it's not in there, and the manual hasn't been updated for this update yet, sorry.
I'll transfer your problem to the QA team, and you can send a message to the support too, they might be able to help you more than I :)

Technical support have now responded and confirmed that this issue is a bug that will be fixed in the next update, hopefully.

I hope that they make it two different sets of settings, i.e v5 settings and Legacy (V4) settings, otherwise it will be a nightmare remapping everything. I'm a new user and I'm less of a sound sculpter and more a preset tweaker, so the current settings work ok for me. Any change to workflow is a pain
