Title: After idle polybrute starts scrolling through modes

It's like demo mode or something. After a few minutes it starts displaying the different modes. I just want it to stay on the matrix display

That's the synth having entered the sleep mode. You can adjust the timer for the sleep in "Setting/Misc/Sleep Time". It can be set to 1, 5 or 15 minutes.
