Title: experimenting with adding layers to just the Mod Wheel

HI,
I know the Mod Wheel is for Modulation
but experimenting with adding layers to just the Mod Wheel that will build over time
How can I assign the Mod Wheel to volume in Midi Control Center?

I would like to use the mod wheel to blend in multiple instrument tracks, like a piano that starts at the lowest setting, then adds a violin at 1/3 of the way up, then add cello at 2/3 of the way up etc.  . .

For volume, I would just use a foot controller.
