Possibly a stupid question but how do you change the settings on the plugin version?

I'm a beginner, but...

The same way you do in standalone.  You click and drag the "knobs" with the mouse.  Preferences are on the File menu.  There are a few things that appear in the standalone version that disappear as a plug-in, like the choice of inputs/outputs.

Or assign knobs on the Mini to knobs on your controller by(I'm a Mac user, sorry)apple/control clicking on the Mini knob and checking MIDI learn in the popup box to assign to your controller.
